Serves 4 to 6 vegetarian

Bhindi Masala

Bhindi Masala, a staple on North Indian tables, embraces the spirit of home cooking with its generous use of fat and salt seasoned by instinct. This dish isn't just prepared; it's crafted by hand and heart, with each family adding their own touch to this classic. It's a familiar presence during everyday meals, bringing comfort and a sense of shared tradition to the table.

The dish offers a delightful interplay of tender okra and the warm earthiness of spices like coriander and turmeric. The subtle tang from amchur brightens each bite, while the caramelized onions add a touch of sweetness. Bhindi Masala is meant to be savored slowly, each mouthful a reminder of home-cooked warmth and the joy of shared meals.

Ingredients

  • 500 gokra
  • 2onions
  • 1 tspamchur
  • 1 tspcoriander powder
  • 1 tspturmeric
  • 3 tbspoil
  • to tastefine sea salt

Method

  1. Start by washing 500 g of okra thoroughly under running water. Pat them dry with a clean kitchen towel to remove any moisture, as this will help prevent them from becoming slimy during cooking. Trim the ends and cut the okra into 1-inch pieces. Peel and finely slice 2 onions, setting them aside separately.
  2. In a large, heavy-bottomed pan, heat 3 tablespoons of oil over medium heat. Once the oil is shimmering, add the sliced onions. Cook them slowly, stirring occasionally, until they become soft and translucent, which should take about 5 to 7 minutes. This slow cooking will bring out the sweetness of the onions, forming a flavorful base for the dish.
  3. Add the cut okra to the pan with the softened onions. Stir well to coat the okra with the oil and onions. Sprinkle 1 teaspoon of turmeric and 1 teaspoon of coriander powder over the mixture, stirring to ensure the spices are evenly distributed. This will give the dish its characteristic color and aroma.
  4. Continue to cook the okra over medium heat, stirring occasionally, until it becomes tender and the sliminess has disappeared. This should take about 10 to 12 minutes. You'll know it's done when the okra is soft to the bite and the spices have melded into the vegetables, creating a cohesive dish.
  5. Sprinkle 1 teaspoon of amchur powder over the cooked okra and onions, stirring well to incorporate. This will add a tangy flavor that balances the earthiness of the spices. Taste the dish and add fine sea salt to your preference, stirring once more to ensure it's evenly seasoned.
  6. Once the Bhindi Masala has reached the desired taste and texture, remove it from the heat. Serve it warm, ideally with fresh chapati or steamed rice, allowing the flavors to shine in a shared meal setting.
