Bibim Naengmyeon

Serves 4 to 6 vegetarian

Bibim Naengmyeon

Bibim Naengmyeon is a dish that captures the essence of Korean summer dining, crafted with an approach that embraces instinct and generosity. Born from a tradition of intuitive cooking, it is often made at home with a personal touch, where salt is not measured but felt, and the richness of sesame oil is never skimped. This recipe embodies a family-style approach, offering a bowl of vibrant flavors meant for sharing around the table.

The dish delivers a symphony of spicy, sweet, and tangy notes, with the gochujang sauce providing a fiery backbone that complements the cooling crunch of cucumber and the soft, savory egg. Each bite is a balance of textures—chewy noodles, crisp vegetables, and creamy yolk—coated lightly with the nutty aroma of sesame oil. Serve it as a refreshing, yet satisfying meal that sings of summer.

Ingredients

  • 400 gnoodles
  • 3 tbspgochujang sauce
  • 1cucumber
  • 1egg
  • 1 tbspsesame oil
  • to tastefine sea salt

Method

  1. Start by preparing the ingredients. Peel and julienne the cucumber into thin strips and set aside. Boil the egg in a small saucepan until hard-boiled, about 8-10 minutes. Once cooked, peel the egg and slice it in half. These will be used as toppings for the Bibim Naengmyeon.
  2. In a large pot, bring water to a boil. Add a pinch of fine sea salt to the water to season the noodles. Once boiling, add the 400 g of noodles and cook until they are tender but still have a slight chew, which is typical for naengmyeon noodles. Drain the noodles and rinse them under cold water to stop the cooking process and to cool them down.
  3. In a mixing bowl, combine 3 tbsp of gochujang sauce with 1 tbsp of sesame oil. Mix well until the sauce is smooth and uniform. This will be the spicy dressing for the noodles, providing the dish with its characteristic heat and flavor.
  4. Add the cooled noodles to the mixing bowl with the gochujang sauce. Toss the noodles thoroughly in the sauce until they are evenly coated. The noodles should appear glossy and red from the sauce, indicating they are well seasoned.
  5. Taste the noodles and adjust the seasoning with fine sea salt if needed. The flavor should be balanced, with a good kick of spice from the gochujang and a nutty aroma from the sesame oil.
  6. To serve, place the dressed noodles in a serving bowl. Top with the julienned cucumber and the halved boiled egg. The cucumber adds a refreshing crunch, while the egg provides a creamy contrast to the spicy noodles. Serve immediately, allowing everyone to enjoy the dish at its freshest.
