Ingredients

  • 800 gbeef cubes
  • 1onion

Method

  1. Start by placing the 800 g beef cubes in a large mixing bowl. Sprinkle them generously with fine sea salt and black pepper to taste, ensuring each piece is well-coated. Add 1 tsp of cumin to the bowl, and use your hands to mix everything thoroughly, massaging the spices into the meat. This step helps the flavors penetrate the beef, enhancing its taste.
  2. Peel and finely chop 1 onion. In a large skillet or grill pan, heat 2 tbsp of oil over medium-high heat until it shimmers. Add the chopped onion and sauté until it becomes translucent and fragrant, which should take a couple of minutes. This will add a subtle sweetness to the beef.
  3. Add the seasoned beef cubes to the pan in a single layer, ensuring they are not overcrowded. Cook them on each side until they develop a deep brown crust, which indicates the Maillard reaction is occurring, enhancing the flavor. Turn the cubes occasionally to brown them evenly on all sides.
  4. Once the beef cubes are browned, you have the option to either continue cooking them in the pan or transfer them to a grill. If using the grill, preheat it to medium-high heat. Thread the beef cubes onto skewers, leaving a small gap between each piece to allow even cooking.
  5. Cook the skewers on the grill, turning them occasionally, until the beef is tender and cooked to your desired doneness. The exterior should be nicely charred, and the interior juicy. If you prefer to braise, add a splash of water to the pan, cover, and let the beef simmer until tender.
