Brasileiro Chickpea Curry

Brasileiro Chickpea Curry brings the comforting essence of Brazilian home cooking to the forefront. It's a dish crafted with a generous hand, where salt and spices are measured by intuition rather than precision. Often served at family tables, it reflects the Brazilian tradition of sharing, with its roots firmly planted in everyday home kitchens rather than festive occasions.

Expect a hearty, aromatic blend where tender chickpeas meet the warmth of cumin and the sweetness of tomatoes and onions. The dish embodies simplicity, yet delivers a complex depth of flavor, making it a staple on tables where the emphasis is on taste, comfort, and the joy of communal dining.

Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by preparing your ingredients. Rinse 400 g of chickpeas under cold water and set them aside to drain. Dice 1 onion finely and chop 2 tomatoes into small cubes. This preparation ensures even cooking and flavor distribution in your curry.
  2. In a large, heavy-bottomed pot, heat 2 tbsp of oil over medium heat. Once the oil is shimmering, add the diced onion. Stir occasionally, cooking until the onion becomes translucent and soft, which should take on a slightly golden hue. This slow cooking releases the onion's sweetness, forming the base of your curry.
  3. Add 1 tsp of cumin to the softened onions, stirring for about 30 seconds until the cumin becomes fragrant. This brief cooking time allows the spice to release its essential oils, enhancing the dish's aroma and flavor.
  4. Introduce the chopped tomatoes to the pot, stirring them into the onion and cumin mixture. Cook until the tomatoes break down and form a thick, pulpy sauce. You'll notice the tomatoes have softened and their juices have melded with the onions, creating a cohesive base.
  5. Add the drained chickpeas to the pot, stirring them into the tomato-onion mixture. Cook gently, allowing the chickpeas to absorb the flavors and heat through. The chickpeas should be tender and well-coated with the sauce, indicating they are ready.
  6. Season the curry with fine sea salt and black pepper to taste, stirring well to ensure even seasoning. Taste and adjust as needed, aiming for a balanced flavor that complements the chickpeas and spices.
  7. Serve the Brasileiro Chickpea Curry warm, ideally with rice or bread. The dish should have a rich, savory aroma and a hearty texture, perfect for sharing around the table.
