Ingredients

  • 700 gfirm white fish
  • 1onion
  • 2tomatoes
  • 80 mloil
  • 1 tspturmeric
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the fish: rinse 700 g of firm white fish under cold water and pat dry with paper towels. Cut the fish into large chunks, about 5 cm each, ensuring they are uniform in size for even cooking. Set aside on a plate.
  2. In a large, deep skillet or a wide pot, heat 80 ml of oil over medium heat. Once the oil is shimmering, add 1 finely chopped onion. Stir occasionally until the onion becomes translucent and soft, releasing its sweet aroma, about 3-4 minutes.
  3. Add 1 tsp of turmeric to the onions, stirring well to coat them evenly. This will infuse the oil with a vibrant color and earthy aroma. Immediately add 2 chopped tomatoes, stirring to combine, and cook until the tomatoes soften and begin to break down, creating a thick, fragrant base.
  4. Gently place the fish chunks into the skillet, nestling them into the tomato mixture. Season with fine sea salt and black pepper to taste. Cover the skillet with a lid and let the fish cook for about 5-7 minutes, or until the fish turns opaque and flakes easily with a fork, indicating doneness.
  5. Once the fish is cooked through, taste the curry and adjust the seasoning with more salt if needed. Serve the Brasileiro Fish Curry immediately, ensuring each serving has a generous portion of both fish and sauce, perfect for sharing around the table.
