Ingredients

Method

  1. Start by thoroughly rinsing the 600 g squid rings under cold running water to remove any sand or impurities. Pat them dry with a clean kitchen towel to ensure they sear properly and don't steam in the pan.
  2. Peel and finely chop the 4 cloves of garlic. In a large, heavy-bottomed skillet, heat 2 tbsp of oil over medium-high heat. Once the oil shimmers, add the garlic and a pinch of chili to taste. Stir continuously until the garlic becomes golden and releases its aroma, taking care not to let it burn.
  3. Add the squid rings to the skillet in a single layer. Cook them over medium-high heat, stirring occasionally, until they turn opaque and firm to the touch, which indicates they are cooked through. This should happen quickly, as overcooking will make them rubbery.
  4. Squeeze the juice of one lemon over the cooked squid, stirring to coat the rings evenly. Taste and adjust with fine sea salt to your preference, keeping in mind that the salt should enhance the natural flavors without overpowering them.
