Cazuela de Mariscos

Cazuela de Mariscos is a beloved coastal stew that graces the tables of seaside towns across Argentina. Traditionally, it is a Sunday affair, when the local fishermen bring in a fresh catch. Ingredients

  • 400 g (14 oz)firm white fish, cubed
  • 400 g (14 oz)squid, sliced
  • 500 g (1.1 lb)mussels
  • 2tomatoes, chopped
  • 1onion, chopped
  • 1 tsppaprika
  • 3 tbspolive oil
  • to tastesalt

Method

  1. In a large, heavy-bottomed pot, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion becomes translucent and soft, about 5 minutes. This will form the aromatic base of your stew.
  2. Add the chopped tomatoes and 1 teaspoon of paprika to the softened onions. Stir well to combine, allowing the tomatoes to release their juices and meld with the onions and paprika. Cook until the mixture becomes a thick, fragrant sauce, with the tomatoes breaking down completely.
  3. Add the sliced squid to the pot, along with a splash of water to prevent sticking. Stir to coat the squid in the tomato mixture. Cover the pot and let it simmer gently for about 15 minutes, until the squid is tender and has absorbed the flavors.
  4. Gently add the cubed white fish and the mussels to the pot. Stir carefully to ensure they are covered by the sauce. Cook until the mussels open and the fish is opaque and flakes easily with a fork. This indicates that the seafood is fully cooked.
  5. Taste the stew and add salt to your preference, enhancing the natural flavors of the seafood and tomato broth.
