Ingredients

  • 700 gchicken breast — cubed
  • 2peppers
  • 1zucchini
  • 1red onion
  • 60 mlextra virgin olive oil

Method

  1. Begin by cutting the 700 g chicken breast into evenly-sized cubes, about 2.5 cm each. Place the chicken pieces in a large bowl and season generously with fine sea salt, freshly squeezed lemon juice, and dried oregano. Mix well to ensure each piece is well-coated, then set aside to marinate while you prepare the vegetables.
  2. Prepare the vegetables by cutting 2 peppers, 1 zucchini, and 1 red onion into similarly sized pieces as the chicken. This ensures even cooking. Place the vegetable pieces in a separate bowl and drizzle with 30 ml of extra virgin olive oil. Season with salt and black pepper, tossing to coat evenly.
  3. Thread the chicken and vegetable pieces alternately onto skewers, ensuring a good mix of colors and flavors on each skewer. This not only looks appealing but also ensures that each skewer cooks evenly.
  4. Heat a large grill pan over medium-high heat and add the remaining 30 ml of extra virgin olive oil. Once the oil is shimmering, place the skewers in the pan, ensuring they are not overcrowded. Cook the skewers, turning occasionally, until the chicken is golden brown on all sides, about 8-10 minutes.
  5. Lower the heat slightly and continue to cook until the chicken is cooked through and the vegetables are tender. The chicken should be firm to the touch and no longer pink in the center, while the vegetables should be slightly charred and softened.
  6. Remove the skewers from the pan and let them rest briefly on a serving platter. This allows the juices to redistribute within the chicken, ensuring moist and flavorful bites.
