Chicken Vindaloo

Serves 4 to 6 chicken

Chicken Vindaloo

Chicken Vindaloo hails from the coastal state of Goa, where its roots are anchored deeply in the region's Portuguese and Indian culinary fusion. Often prepared during festive occasions and family gatherings, this dish is a household favorite, cherished for its robust flavors and the warmth it brings to the table. This version captures the essence of a Goan home kitchen, where ingredients are adjusted by intuition and experience rather than strict measurements.

Expect a fiery yet balanced heat from the dried red chilies, mellowed by the tang of malt vinegar and the sweetness of brown sugar. The tender chicken, infused with the aromatic blend of cumin and garlic, meets the comforting starch of potatoes, creating a dish that is rich and hearty. Generous in spice and spirit, it invites you to share and savor each mouthful.

Ingredients

  • 800 gchicken thighs
  • 8dried red chilies
  • 2 tbspmalt vinegar
  • 1 tspcumin seeds
  • 6garlic cloves
  • 1 tspbrown sugar
  • 2potatoes
  • 3 tbspoil
  • to tastefine sea salt

Method

  1. Begin by patting 800 g of chicken thighs dry with paper towels. Season them generously with fine sea salt and set aside. Heat 3 tablespoons of oil in a large, heavy-bottomed pan over medium-high heat. Once the oil shimmers, add the chicken thighs, skin side down, and brown them for about 5 minutes on each side until they develop a deep golden crust. Remove the chicken from the pan and set aside.
  2. In the same pan, add 1 teaspoon of cumin seeds and let them sizzle for about 30 seconds until they release their aroma. Crush 8 dried red chilies and 6 garlic cloves into a paste using a mortar and pestle, then add this paste to the pan. Stir continuously, cooking for about 2 minutes until the garlic turns golden and fragrant.
  3. Peel and dice 2 potatoes into 1-inch cubes. Add the potatoes to the pan, stirring to coat them in the aromatic mixture. Return the browned chicken thighs to the pan, nestling them among the potatoes.
  4. Pour in 2 tablespoons of malt vinegar and sprinkle 1 teaspoon of brown sugar over the mixture. Stir well, ensuring the chicken and potatoes are evenly coated. Cover the pan with a lid and reduce the heat to low. Allow the dish to simmer gently, stirring occasionally, until the chicken is cooked through and the potatoes are tender. The chicken should be firm yet yielding to the touch, and the potatoes should be easily pierced with a fork.
  5. If the sauce appears too thin, remove the lid and increase the heat to medium to reduce it slightly, stirring frequently. Taste the sauce and adjust the seasoning with more fine sea salt if necessary. The sauce should be rich and tangy, with a balance of heat and sweetness.
  6. Finish the dish by garnishing with fresh herbs of your choice, such as cilantro, if desired. Serve the Chicken Vindaloo hot, accompanied by steamed rice or warm naan, ready for sharing around the table.
