Chicken with Preserved Lemon and Olives (Poulet aux Citrons Confits)

Moroccan chicken with preserved lemon and olives is a city kitchen staple, embodying the essence of a relaxed Saturday and introducing the world to the tagine's magic with its blend of spices and simple ingredients.

Expect a harmony of tangy preserved lemon and briny olives, underpinned by the earthiness of ginger and saffron. The chicken should be tender and infused with flavor, complemented by the freshness of cilantro and parsley. This dish is a lesson in balance, where each bite tells a story of Moroccan culinary ingenuity.

Ingredients

  • 1.5 kg (3.3 lb)chicken, pieces
  • 1onion, grated
  • 1 tspginger
  • 1 tspturmeric
  • pinchsaffron
  • 1preserved lemon, quartered
  • 150 g (5 oz)green or purple olives
  • 1 handfulcilantro and parsley, chopped
  • 3 tbspolive oil
  • 1 tspsalt

Method

  1. In a large mixing bowl, combine the grated onion, 1 teaspoon of ginger, 1 teaspoon of turmeric, a pinch of saffron, and 3 tablespoons of olive oil. Add a teaspoon of salt and the chopped cilantro and parsley. Mix well to create a fragrant marinade. Add the chicken pieces to the bowl, ensuring each piece is thoroughly coated with the marinade. Cover the bowl and let it rest for 30 minutes to allow the flavors to penetrate the meat.
  2. In a large, heavy-bottomed pot or a traditional tagine, arrange the marinated chicken pieces in a single layer. Pour any remaining marinade over the chicken. Add just enough water to barely cover the bottom of the pot, about 1/4 cup. Cover the pot with a lid and cook over medium heat. As the chicken cooks, it will start to release its juices, and the aroma of the spices will fill your kitchen.
  3. After about 45 minutes, check the chicken for tenderness. It should start to become tender, and the meat will begin to pull away from the bone. At this point, add the quartered preserved lemon and 150 grams (5 oz) of green or purple olives to the pot. Stir gently to distribute them evenly among the chicken pieces.
  4. Increase the heat slightly and remove the lid to allow the sauce to reduce. Continue cooking for another 15 minutes, stirring occasionally. As the sauce reduces, it should become silky and slightly thickened. The chicken should be tender and easily pull away from the bone.
  5. Taste the sauce; it should be well-seasoned with a balance of salty, tangy, and aromatic flavors. The preserved lemon rind should be soft and edible. Once the desired consistency is reached, remove the pot from the heat and let it rest for a few minutes before serving.
