Chinese Chicken Roast

Chinese Chicken Roast is a beloved dish in Chinese home kitchens, where cooks rely on their instincts to season with salt and use fat liberally. This version captures the essence of how a Chinese family cook would prepare it, focusing on simplicity and flavor.

The dish features a whole chicken, paired with potatoes and seasoned with paprika, lemon, salt, and black pepper. It's a meal meant for sharing, bringing people together around the table to enjoy its rich and comforting taste.

Ingredients

Method

  1. Start by patting the whole chicken dry with paper towels to ensure a crisp skin. Generously season the chicken inside and out with fine sea salt and black pepper, making sure to rub it evenly over the surface. Sprinkle 1 teaspoon of paprika over the chicken, ensuring it is evenly coated for a subtle smoky flavor.
  2. In a large, heavy-bottomed pan, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, carefully place the chicken in the pan, breast side down. Allow it to brown for about 5 minutes on each side, turning carefully to avoid tearing the skin. The skin should turn a deep golden brown, which indicates it's sealing in the juices.
  3. While the chicken is browning, cut the 1 kg of potatoes into even-sized chunks. Once the chicken is browned, remove it from the pan and set it aside. Add the potato chunks to the same pan, allowing them to soak up the flavorful drippings. Stir occasionally until they start to turn golden and slightly crisp on the edges.
  4. Return the chicken to the pan, nestling it among the potatoes. Squeeze the juice from the halved lemon over the chicken and potatoes, then place the lemon halves in the pan for added fragrance. Cover the pan with a lid or foil, reducing the heat to medium-low, and let it cook for about 30 minutes.
  5. Check the chicken for doneness by piercing the thickest part of the thigh with a skewer; the juices should run clear, and the meat should feel firm to the touch. If the sauce in the pan seems too thin, remove the chicken and potatoes, then increase the heat to reduce the sauce until it lightly coats the back of a spoon.
  6. Taste the sauce for seasoning, adjusting with more salt and pepper if necessary. Once satisfied with the flavor, return the chicken and potatoes to the pan, spooning some of the sauce over them to reheat and coat.
  7. Finish the dish by garnishing with fresh herbs of your choice, such as cilantro or scallions, for a burst of color and freshness. Serve the Chinese Chicken Roast family-style, ensuring everyone gets a share of both the juicy chicken and the tender, flavorful potatoes.
