Ingredients

Method

  1. Begin by cleaning the fish thoroughly under cold running water to remove any scales or impurities. Pat the fish dry with paper towels, ensuring there is no excess moisture, which helps achieve a nice sear and prevents sticking.
  2. Place a large, heavy-bottomed skillet or grill pan over medium-high heat. Add 2 tablespoons of olive oil and let it heat until it shimmers, indicating it's hot enough to start cooking.
  3. Carefully lay the fish into the pan, ensuring the skin side is down. This will help achieve a crispy texture. Cook for about 3-4 minutes, pressing gently with a spatula to ensure even contact with the pan.
  4. Flip the fish gently using a spatula. Continue cooking on the other side until the flesh turns opaque and flakes easily with a fork, indicating it is cooked through.
  5. While the fish is cooking, slice a lemon into wedges and chop a handful of fresh herbs of your choice, such as cilantro or parsley, to add freshness and aroma to the dish.
  6. Once the fish is cooked, remove it from the pan and place it on a serving platter. Squeeze fresh lemon juice over the top and sprinkle generously with the chopped herbs.
