Crab Masala

Crab Masala from Mangalore captures the essence of coastal Indian cooking. Traditionally enjoyed as a weekend indulgence, this dish is prepared with a generous hand, reflecting the warmth and hospitality of a Mangalorean home. Passed down through generations, it transforms humble ingredients into a feast fit for family gatherings, where the aroma of coconut mingles with the sea breeze.

Expect a rich, savory experience as the sweetness of mud crabs melds with the warmth of bafat masala and the creaminess of fresh coconut. The dish is a celebration of textures and flavors, with a hint of cilantro to brighten the plate. Perfect for sharing, it turns any meal into a special occasion.

Ingredients

  • 1 kgmud crabs
  • 2onions
  • 1 tbspbafat masala
  • 1coconut — grated
  • 2tomatoes
  • 3 tbspcoconut oil
  • 1 handfulcilantro
  • to tastefine sea salt

Method

  1. Begin by cleaning the 1 kg of mud crabs thoroughly under running water to remove any dirt or sand. Once cleaned, break the crabs into halves or quarters, depending on their size, and crack the claws slightly to allow the flavors to penetrate. Pat them dry with a kitchen towel to ensure they cook evenly when added to the masala.
  2. In a large, heavy-bottomed pan, heat 3 tablespoons of coconut oil over medium heat. Finely chop 2 onions and add them to the pan. Sauté the onions until they turn golden brown, stirring occasionally to prevent them from burning. This process will create a sweet and savory base for the dish.
  3. While the onions are cooking, grate the flesh of 1 coconut and set it aside. Once the onions are ready, add 1 tablespoon of bafat masala to the pan and stir well to coat the onions. The spices should bloom in the oil, releasing a rich aroma that signifies they are ready for the next step.
  4. Chop 2 tomatoes and add them to the pan. Cook them until they soften and begin to break down, forming a thick, fragrant paste with the onions and spices. This mixture should have a deep, reddish-brown color and a slightly oily sheen, indicating the tomatoes have released their moisture and melded with the spices.
  5. Add the cleaned crabs to the pan, stirring to coat them thoroughly with the masala. Cook the crabs over medium heat until they turn just opaque and the shells change color to a bright orange-red. This indicates that the crabs are cooked through but still juicy.
  6. Sprinkle the grated coconut over the crabs and stir gently to combine. The coconut will add a subtle sweetness and richness to the dish, balancing the spices. Allow the mixture to cook for an additional minute, just until the coconut is warmed through.
  7. Taste the Crab Masala and add fine sea salt to your preference, keeping in mind that the sweetness of the coconut will mellow the saltiness. Garnish with a handful of chopped cilantro for a fresh, herbal note. Serve the Crab Masala immediately, ensuring the crabs remain succulent and the masala vibrant.
