Dum Aloo

Serves 4 to 6 vegetarian

Dum Aloo

Dum Aloo is a beloved dish that hails from the regions of Kashmir and Banaras, where it is traditionally prepared for family gatherings and festive occasions. The recipe's roots trace back to the culinary heart of Indian homes, where the intuitive use of spices and generous dollops of fat are celebrated as much as the dish itself. This home-style version offers a glimpse into how Indian family cooks have lovingly crafted this dish for generations, bringing warmth and comfort to their tables.

The taste of Dum Aloo is a harmonious blend of tender baby potatoes enveloped in a rich and spicy yogurt-based gravy. The vibrant red hue from Kashmiri chili and the aromatic notes of fennel and ginger powder mingle with the tangy yogurt, creating a dish that is both flavorful and deeply satisfying. Each bite is a comforting embrace of soft potatoes, balanced with the piquancy of mustard oil and the warmth of carefully measured spices, inviting you to savor every mouthful.

Ingredients

  • 12baby potatoes
  • 200 gyogurt
  • 1 tbspkashmiri chili
  • 1 tspfennel powder
  • 3 tbspmustard oil
  • 1 tspginger powder
  • to tastefine sea salt

Method

  1. Begin by washing 12 baby potatoes thoroughly to remove any dirt. Boil them in a pot of salted water until they are just tender, about 80% cooked. You should be able to pierce them with a fork, but they should not fall apart. Drain the potatoes and let them cool slightly before peeling them. Once peeled, use a fork to gently prick each potato a few times; this will help them absorb the flavors better.
  2. In a mixing bowl, combine 200 g of yogurt, 1 tbsp of Kashmiri chili, 1 tsp of fennel powder, 1 tsp of ginger powder, and fine sea salt to taste. Whisk the mixture until smooth and set aside. This spiced yogurt will form the base of your sauce, providing both flavor and creaminess.
  3. Heat 3 tbsp of mustard oil in a heavy-bottomed pan over medium heat. Allow the oil to reach its smoking point, then reduce the heat slightly. Carefully add the peeled and pricked potatoes to the pan. Fry them until they develop a golden-brown crust on all sides, which should take about 5-7 minutes. This step enhances the flavor and texture of the potatoes.
  4. Once the potatoes are golden, reduce the heat to low and add the spiced yogurt mixture to the pan. Stir gently to coat the potatoes evenly, ensuring the yogurt does not curdle. Cook the mixture slowly, allowing the flavors to meld and the sauce to thicken. Stir occasionally, making sure the sauce clings to the potatoes and develops a rich, reddish hue.
  5. Continue cooking until the sauce has reduced and the potatoes are fully cooked through. The sauce should be thick enough to coat the back of a spoon, and the potatoes should be tender when pierced with a fork. Taste the dish and adjust the salt if necessary, keeping in mind that the flavors should be balanced and slightly tangy from the yogurt.
  6. Serve the Dum Aloo hot, garnished with a sprinkle of fennel powder if desired. Traditionally, this dish is enjoyed with steamed rice or Indian bread, making it perfect for sharing at the table.
