Anchovies, a beloved fish in Greece, are transformed into a delightful dish through a method that relies on the perfect balance of olive oil, vinegar, and garlic. This home version brings the taverna experience to your kitchen, where the tradition of cooking by feel and taste takes precedence over measurements.

The dish should taste bright and aromatic, with the anchovies' natural richness complemented by the tang of vinegar and the warmth of garlic. A sprinkle of oregano adds a fragrant finish, while a pinch of sea salt highlights the anchovies' flavors. Serve it as an appetizer, inviting the crispness of a good Greek white wine to join the table.

Ingredients

  • 600 gfresh anchovies — cleaned
  • 120 mlolive oil
  • 80 mlwhite wine vinegar
  • garlic — sliced

Method

  1. Begin by cleaning the 600 g of fresh anchovies. Remove the heads and guts by pinching just below the gills and pulling gently. Rinse them under cold water to remove any remaining innards and scales. Pat them dry with paper towels to ensure they sear properly and don't steam in their own moisture.
  2. In a large skillet, pour 120 ml of olive oil and heat it over medium heat. Add finely chopped garlic (about 2-3 cloves, depending on your taste) to the oil. Cook the garlic until it becomes fragrant and just begins to turn golden, being careful not to let it burn, as this will make it bitter.
  3. Carefully lay the cleaned anchovies in the skillet in a single layer. Pour 80 ml of white wine vinegar over the fish. Allow the anchovies to cook gently, turning them once, until they are just opaque and firm to the touch. This should take about 2-3 minutes per side, depending on their size.
  4. Once the anchovies are cooked through, sprinkle them generously with dried oregano. The oregano should release its aroma as it hits the warm fish, enhancing the dish's flavor.
  5. Taste the anchovies and add fine sea salt to your preference. Remember, the salt should enhance the natural flavors of the fish and not overpower them.
  6. Serve the Gavros Marinatos immediately while the fish is warm and the flavors are at their peak. You can finish with a squeeze of fresh lemon juice if desired, to add a bright, tangy contrast to the rich olive oil and vinegar marinade.
