Gemista

Gemista is a beloved staple of Greek summer tables, capturing the essence of sun-drenched gardens in every bite. Tomatoes and green peppers, plump and ripe from the season, are lovingly filled with a savory mixture of rice, ground beef, and fresh herbs. This dish is often prepared when gardens overflow with produce, a celebration of abundance shared among family and friends.

The taste of Gemista is a harmonious blend of tender vegetables and a fragrant filling, each bite bursting with the bright notes of parsley and mint. Olive oil seeps into every layer, bringing a luscious richness, while a hint of lemon elevates with a refreshing zing. Salt and pepper, measured by instinct, balance the flavors, creating a dish that is as comforting as it is vibrant.

Ingredients

  • 6ripe tomatoes — hollowed
  • 4green peppers — hollowed
  • 200 grice
  • 200 gground beef — optional; use more rice for vegetarian
  • 1 bunchparsley
  • 1 bunchmint
  • 120 mlolive oil
  • 1onion — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the vegetables. Cut the tops off the 6 ripe tomatoes and 4 green peppers, setting the tops aside. Carefully scoop out the insides of the tomatoes with a spoon, keeping the pulp in a bowl. Remove the seeds from the peppers. These hollowed vegetables will be your vessels for the filling.
  2. Chop the reserved tomato pulp finely and set aside. Finely dice 1 onion and chop the bunches of parsley and mint. These will add freshness and depth to the filling.
  3. In a large skillet, heat 60 ml of olive oil over medium heat. Add the diced onion and sauté until translucent and fragrant, about 5 minutes. Add 200 g of ground beef, season with fine sea salt and black pepper, and cook until browned and deeply colored, breaking it up with a wooden spoon.
  4. Stir in the chopped tomato pulp and 200 g of rice into the skillet with the beef. Cook for a few minutes until the rice is well-coated and begins to turn opaque. Add the chopped parsley and mint, mixing to combine. This mixture should be moist but not soupy.
  5. Season the filling with additional salt and black pepper to taste. Fill each hollowed tomato and pepper with the rice and beef mixture, pressing down gently to pack it in. Leave a little space at the top to allow the rice to expand during cooking.
  6. Arrange the filled vegetables in a baking dish, fitting them snugly so they support each other. Drizzle the remaining 60 ml of olive oil over the tops and around the dish. Replace the tops of the tomatoes and peppers to cover the filling.
  7. Pour a small amount of water into the bottom of the baking dish to create steam, about 1 cm deep. Cover the dish with aluminum foil and bake in a preheated oven at 180°C (350°F) until the rice is tender and the vegetables are soft, about 1 hour. The tops should be slightly charred and the kitchen filled with the aroma of cooked tomatoes and herbs.
  8. Remove the foil and bake for an additional 10 minutes to allow the tops to crisp up slightly. Serve the Gemista warm, with lemon wedges on the side for squeezing over, enhancing the flavors with a bright, citrusy note.
