Goat Curry

Goat Curry

Goat Curry, a staple in Indian homes, is often reserved for leisurely Sunday afternoons when families gather around to enjoy a meal that requires patience and care. The recipe is passed down through generations, capturing the essence of home cooking with each aromatic spoonful. This version reflects the way an Indian family cook would prepare it, not skimping on the richness of flavors or the generosity of spirit.

The taste is deeply savory, with tender goat meat soaking up the warm spices of meat masala and the tang of yogurt. Onions and tomatoes meld into a thick, luscious sauce, balanced by the freshness of cilantro. This dish is all about the harmony of flavors, served with a side of simple rice or fresh flatbreads to soak up every last bit.

Ingredients

  • 1 kggoat pieces
  • 200 gyogurt
  • 2onions
  • 2 tbspmeat masala
  • 3tomatoes
  • 3 tbspoil
  • 1 handfulcilantro
  • to tastefine sea salt

Method

  1. Start by placing the 1 kg goat pieces in a large mixing bowl. Add 200 g of yogurt, 2 tbsp of meat masala, and a generous pinch of fine sea salt. Mix thoroughly using your hands to ensure each piece is well coated with the marinade. Let it sit for at least 30 minutes to allow the flavors to penetrate the meat.
  2. While the meat is marinating, finely slice 2 onions and roughly chop 3 tomatoes. Set these aside as they will be used shortly.
  3. In a large, heavy-bottomed pot or deep pan, heat 3 tbsp of oil over medium-high heat. Once the oil is shimmering, add the sliced onions. Sauté them until they become golden brown and start to caramelize, which should take on a deep, rich color and sweet aroma.
  4. Add the marinated goat pieces to the pot in a single layer, ensuring not to overcrowd. Allow them to brown on all sides, turning occasionally. Look for a deep, golden crust on the meat, which will enhance the flavor of the curry.
  5. Once the goat pieces are browned, add the chopped tomatoes to the pot. Stir well to combine, allowing the tomatoes to break down and release their juices. This will form the base of your curry sauce.
  6. Reduce the heat to low and cover the pot with a lid. Let the curry simmer gently, stirring occasionally, until the goat is tender. The meat should be easy to pierce with a fork and the sauce should be thick and flavorful.
  7. Taste the curry and adjust the seasoning with more fine sea salt if necessary. The flavors should be balanced, with the spices and salt enhancing the richness of the goat.
  8. Finish the dish by garnishing with a handful of chopped cilantro. Serve the Goat Curry hot with rice, bread, or a fresh salad, allowing everyone to enjoy the communal experience of a home-cooked meal.
