Godeungeo Gui

Serves 4 to 6 seafood

Godeungeo Gui

Godeungeo Gui is a cherished dish that brings the essence of Korean home cooking to life. Often prepared for family dinners or casual gatherings, this grilled mackerel embodies the simplicity and comfort found in the Korean household. The mackerel is seasoned with just the right amount of fine sea salt, a technique mastered by generations of family cooks who rely on touch and intuition rather than precise measurements.

The result is a perfectly grilled fish with a crispy exterior and moist, tender flesh. The delicate balance of salt enhances the natural flavors of the mackerel, while a hint of sesame oil adds a subtle nutty aroma. A squeeze of lemon brightens each bite, and ssamjang offers a savory dip, creating a harmonious blend of tastes that invites sharing and enjoyment.

Ingredients

  • 2mackerel
  • 1 tspfine sea salt
  • 1 tspsesame oil
  • lemon — to serve
  • ssamjang — to serve

Method

  1. Start by cleaning the mackerel. Rinse each fish under cold running water to remove any scales or debris. Pat them dry thoroughly with paper towels, ensuring there is no excess moisture, which will help achieve a crispy skin during cooking.
  2. Sprinkle 1 teaspoon of fine sea salt evenly over both sides of each mackerel. Let them sit for about 10 minutes to allow the salt to penetrate and season the fish, enhancing its natural flavors.
  3. In a large skillet, preferably non-stick, heat 1 teaspoon of sesame oil over medium heat. Swirl the oil around to coat the bottom of the pan evenly. The sesame oil will add a subtle nutty aroma that complements the mackerel.
  4. Once the oil is hot, place the mackerel in the skillet, skin side down. Cook for about 3 to 4 minutes, pressing gently with a spatula to ensure even contact with the pan. The skin should turn golden brown and crisp, while the edges of the fish begin to turn opaque.
  5. Carefully flip the mackerel over and continue cooking for another 2 to 3 minutes. The fish is done when it is just opaque throughout and flakes easily with a fork. Avoid overcooking to keep the fish moist and tender.
  6. Remove the mackerel from the skillet and transfer to a serving platter. Squeeze fresh lemon juice over the top to add a bright, tangy contrast to the rich flavors of the fish.
  7. Serve the Godeungeo Gui immediately with a side of ssamjang for dipping. The savory and slightly spicy ssamjang pairs perfectly with the grilled mackerel, making it a delightful dish to share at the table.
