Ingredients

Method

  1. Rinse the 12 fresh sardines under cold water to remove any scales or impurities. Pat them dry thoroughly with paper towels to ensure they crisp up nicely on the grill. Sprinkle each sardine with a fine layer of sea salt, allowing the salt to penetrate and enhance the natural flavors of the fish.
  2. In a small bowl, combine 60 ml of extra virgin olive oil with 1 teaspoon of oregano. Stir well to infuse the oil with the herb's aroma. This mixture will serve as a flavorful base and basting oil for the sardines.
  3. Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed for consistent heat. Lightly oil the grill grates with a brush or cloth dipped in olive oil to prevent the sardines from sticking.
  4. Place the sardines on the grill, ensuring they are not overcrowded. Brush them generously with the oregano-infused olive oil.
