Imam Bayildi is a beloved staple of Turkish cuisine, renowned for its simple yet satisfying flavors that capture the essence of the Mediterranean diet. Traditionally served as a meze or a light main course, it brings the bounty of the garden to the table with its lush combination of eggplant, tomatoes, and a generous dose of olive oil. Method

  1. Start by preparing the eggplants. Cut each of the 4 eggplants in half lengthwise. Using a sharp knife, score the flesh in a crisscross pattern, being careful not to cut through the skin. Sprinkle the cut sides with a little fine sea salt and set them aside to allow the salt to draw out any bitterness.
  2. While the eggplants rest, finely slice the 3 onions and mince the 4 cloves of garlic. Dice the 4 tomatoes into small pieces. This will ensure that all your ingredients are ready to go when you start cooking.
  3. In a large, wide pan, heat 100 ml of extra virgin olive oil over medium heat. Once the oil is warm, add the sliced onions and cook them slowly, stirring occasionally, until they become soft and translucent. This should take about 10 minutes. Add the minced garlic and continue to cook until the garlic is fragrant but not browned.
  4. Add the diced tomatoes to the pan along with 1 teaspoon of sugar. Stir everything together and let the mixture cook until the tomatoes have broken down and melded with the onions and garlic, creating a thick, aromatic sauce. The mixture should be soft and juicy, with no raw tomato smell remaining.
  5. Rinse the salted eggplants under cold water to remove excess salt and pat them dry with a paper towel. Create a space in the pan for each eggplant half, placing them cut side down into the tomato-onion mixture. Spoon some of the sauce over the top of each eggplant to ensure they absorb the flavors.
  6. Cover the pan with a lid and reduce the heat to low. Allow the eggplants to cook gently for about 30 minutes, or until they are tender and easily pierced with a fork. The flesh should be soft and creamy, absorbing the rich flavors of the sauce.
  7. Once the eggplants are cooked, taste the sauce and adjust the seasoning with fine sea salt if necessary. Just before serving, sprinkle freshly chopped parsley over the dish. Serve warm or at room temperature, with lemon wedges on the side for a bright, fresh finish.
