Indian Beef Skewers

Indian Beef Skewers

Indian Beef Skewers reflect the unassuming brilliance of home cooking, where the kitchen becomes a workshop of aromatic simplicity. Born from Indian family kitchens where every cook has their own touch, this dish is a staple on weekends or intimate gatherings. The beef is cubed and seasoned with a careful hand, a practice that has been passed down through generations, focusing on the essentials: salt, fat, and flavor.

When you bite into these skewers, expect a tender, juicy experience, with each piece of beef carrying the warmth of cumin and the subtle sweetness of onion. The meat's natural juices mingle with the spices, creating a satisfying harmony. Serve these skewers straight from the grill to the table, encouraging a communal feast where each skewer is savored and shared.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Begin by placing the 800 g beef cubes in a large mixing bowl. Sprinkle them generously with fine sea salt and black pepper to taste. Add 1 tsp cumin to the bowl, ensuring each piece of meat is well-coated with the spices. Use your hands to massage the spices into the meat, allowing the flavors to penetrate deeply.
  2. Peel and finely chop 1 onion. In a large, heavy-bottomed skillet or frying pan, heat 2 tbsp oil over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it turns golden brown, which will enhance the sweetness and depth of flavor in the dish.
  3. Increase the heat to high and add the seasoned beef cubes to the pan in a single layer. Do not overcrowd the pan; work in batches if necessary. Allow the beef to brown on all sides, turning occasionally. Look for a deep, rich color on the outside of the beef, which indicates a good sear and caramelization.
  4. Once all the beef cubes are browned, transfer them to skewers, threading them securely. If you prefer, you can also braise the beef in the same pan by adding a splash of water or broth, covering, and reducing the heat to low. Alternatively, preheat your grill to medium-high and place the skewers on the grill.
  5. Cook the skewers until the beef is tender and cooked to your desired doneness. For grilling, turn the skewers occasionally to ensure even cooking. If braising, check for tenderness by piercing a piece of beef with a fork; it should be easy to insert and remove.
  6. Once cooked, taste a piece of beef and adjust the seasoning with additional salt if needed. Serve the Indian Beef Skewers hot, accompanied by rice, bread, or a fresh salad, allowing everyone to enjoy the communal spirit of the meal.
