This version reflects the way many Indian cooks prepare it, with the salt measured intuitively and the oil added with a generous hand.

This curry is a comforting medley of tender chickpeas, softened onions, and ripe tomatoes, all brought together by the earthy warmth of cumin. Ingredients

  • 400 gchickpeas — cooked
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by draining and rinsing the 400 g chickpeas thoroughly under cold water to remove any canning liquid or preservatives. Dice the onion finely and chop the tomatoes into small pieces. This preparation ensures even cooking and a balanced texture in your curry.
  2. In a large, heavy-bottomed pan, heat 2 tbsp oil over medium heat. Once the oil is shimmering, add 1 tsp cumin seeds. Allow them to sizzle and become fragrant, which releases their essential oils and enhances the flavor of the dish.
  3. Add the diced onion to the pan. Stir occasionally, cooking slowly until the onion becomes translucent and soft, which should take about 5 to 7 minutes. This slow cooking helps develop a sweet, rich base for the curry.
  4. Introduce the chopped tomatoes to the pan. Stir them in and cook until they break down into a thick, pulpy sauce. This should take another 5 to 7 minutes, and you'll notice the oil beginning to separate from the tomatoes, indicating they are well-cooked.
  5. Add the drained chickpeas to the pan, stirring well to coat them in the tomato and onion mixture. Cook for another 5 minutes, allowing the chickpeas to absorb the flavors and heat through completely.
  6. Season the curry with fine sea salt and black pepper to taste. Stir well and taste, adjusting the seasoning as needed. The chickpeas should be tender and the sauce well-seasoned, with a balance of flavors.
  7. Once satisfied with the seasoning, remove the curry from the heat. Let it rest for a few minutes to allow the flavors to meld. Serve the Indian Chickpea Curry warm, ideally with rice or flatbread, sharing it with family or friends as is traditional in Indian home cooking.
