Indian Squid Stir-Fry

Indian Squid Stir-Fry finds its roots in the informal gatherings of coastal Indian homes, where seafood is a staple and family recipes are passed down through generations. This dish is not about precise measurements but about the intuitive cooking that defines Indian home kitchens. Squid, known for its tender bite, is celebrated in this stir-fry with the warmth of garlic and the heat of chili, a combination that speaks to the heart of Indian coastal cuisine.

Expect a burst of flavors with each bite—tender squid rings enveloped in the sharpness of garlic and the zing of freshly squeezed lemon. The generous use of oil ensures a luscious texture, while the chili adds a gentle kick, rounded off by the subtlety of hand-judged salt. This stir-fry captures the essence of home-cooked Indian meals, meant to be enjoyed in the company of those who appreciate the simplicity and depth of flavor.

Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic
  • 2 tbspoil
  • to tastechili
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Rinse the 600 g squid rings under cold water to remove any grit or residue. Pat them dry thoroughly with a clean kitchen towel to ensure they sear properly in the pan.
  2. Peel and finely chop 4 cloves of garlic. This will help release their full flavor and infuse the oil with a rich aroma.
  3. In a large, heavy-bottomed skillet, heat 2 tbsp of oil over medium-high heat until it shimmers. This indicates the oil is hot enough to cook the aromatics.
  4. Add the chopped garlic to the hot oil and stir continuously. Cook until the garlic turns a light golden brown and releases a fragrant aroma, being careful not to let it burn.
  5. Add the squid rings to the skillet, spreading them out in a single layer. Stir gently to coat them in the aromatic oil and garlic.
  6. Sprinkle chili to taste over the squid, adjusting the amount based on your spice preference. Stir to combine, ensuring the chili evenly coats the squid.
  7. Cook the squid rings for about 2-3 minutes, stirring occasionally, until they turn opaque and firm. This indicates they are cooked through without becoming rubbery.
  8. Squeeze the juice of a lemon over the squid and stir to combine. This adds a fresh, tangy flavor that complements the spices.
  9. Taste the dish and add fine sea salt to taste, stirring well to ensure even seasoning. Serve the Indian Squid Stir-Fry immediately, while the flavors are vibrant and fresh.
