Kadhi Pakora

Serves 4 to 6 vegetarian

Kadhi Pakora

Kadhi Pakora hails from the culinary traditions of Punjab and Rajasthan, where it graces tables with its comforting presence. Often prepared for family lunches or gatherings, this dish exemplifies the art of home cooking, where intuition guides the hand that sprinkles salt and the generous use of fat speaks to its roots. It is a beloved staple, capturing the essence of regional flavors and the warmth of shared meals.

This dish envelops the palate with a tangy yogurt base, enriched by the earthiness of besan and the gentle bitterness of fenugreek seeds. The golden turmeric and fragrant curry leaves infuse the kadhi with vibrant color and aroma, while crispy onion pakoras add delightful texture. Finished with a drizzle of ghee, it offers a harmonious blend of flavors, perfect for savoring with steamed rice or roti.

Ingredients

  • 400 gyogurt
  • 4 tbspbesan
  • 12onion pakoras
  • 1 tspfenugreek seeds
  • 1 tspturmeric
  • 8curry leaves
  • 2 tbspghee
  • to tastefine sea salt

Method

  1. In a mixing bowl, combine 400 g yogurt and 4 tbsp besan. Whisk them together until smooth and lump-free, ensuring the besan is fully incorporated into the yogurt. This mixture will form the base of your kadhi, so achieving a smooth consistency is crucial for a creamy texture.
  2. Add 1 tsp turmeric to the yogurt-besan mixture, stirring well to evenly distribute the spice. The turmeric will give the kadhi its characteristic yellow color and a subtle earthy flavor. Set this mixture aside for now.
  3. In a large, heavy-bottomed pot, heat 2 tbsp ghee over medium heat. Once the ghee has melted and is shimmering, add 1 tsp fenugreek seeds. Allow them to sizzle and release their aroma, which should take about 30 seconds, but be careful not to let them burn.
  4. Add 8 curry leaves to the pot, letting them crackle in the hot ghee. The leaves will infuse the ghee with their distinctive aroma, enhancing the overall flavor of the kadhi.
  5. Gently pour the yogurt-besan mixture into the pot, stirring continuously to prevent any lumps from forming. Keep the heat on medium and continue stirring until the mixture begins to thicken slightly and comes to a gentle simmer. The kadhi should have a smooth, velvety texture at this stage.
  6. Add the 12 onion pakoras to the simmering kadhi, allowing them to soak up the flavors. Continue to cook for a few more minutes until the pakoras are heated through and the kadhi has reached your desired consistency. The kadhi should coat the back of a spoon without being too thick.
  7. Taste the kadhi and add fine sea salt to your preference, stirring well to ensure it's evenly distributed. The salt will balance the tanginess of the yogurt and enhance the spices.
  8. Once the kadhi is perfectly seasoned, remove it from the heat and serve hot. Enjoy this comforting dish with steamed rice or warm rotis, sharing it with family and friends as is traditional.
