Khao Kha Moo

Serves 4 to 6 meat

Khao Kha Moo

Khao Kha Moo, a beloved street food staple, finds its roots in Thailand's bustling stewed-pork shops. This home-style version mirrors the traditional method, where salt is measured by intuition, and fat is embraced rather than feared. A Thai family cook's approach brings this comforting dish from the streets to your table, preserving the essence of its well-loved flavors.

The dish should envelop you in a tender, savory embrace, with rich, unctuous pork knuckle complemented by the aromatic warmth of five-spice. When served alongside fluffy rice, a boiled egg, and tangy pickled mustard, each bite offers a harmonious balance of textures and tastes, inviting you to savor every mouthful.

Ingredients

  • 700 gpork knuckle
  • 400 grice
  • boiled egg — to serve
  • pickled mustard — to serve
  • 1 tbspfive-spice
  • to tastefine sea salt

Method

  1. Begin by seasoning the 700 g pork knuckle generously with fine sea salt and 1 tbsp of five-spice powder. Rub the spices thoroughly into the meat, ensuring an even coating. This will help infuse the pork with flavor and tenderize it during cooking.
  2. In a large, heavy-bottomed pot or Dutch oven, heat a generous amount of oil over medium-high heat. Once the oil is shimmering, add the seasoned pork knuckle. Sear each side until it develops a deep, rich brown color, which should take about 3-4 minutes per side. This step is crucial for building flavor and creating a caramelized crust.
  3. After browning, reduce the heat to low and add enough water to the pot to cover the pork knuckle halfway. Cover the pot with a lid and let the pork braise gently. The meat is ready when it is tender enough to be easily pierced with a fork and has absorbed the aromatic spices, which should take on a deep, savory aroma.
  4. While the pork is braising, cook 400 g of rice according to package instructions in a separate pot. The rice should be fluffy and fully cooked, providing a neutral base to complement the rich flavors of the pork.
  5. Once the pork is tender, taste the braising liquid and adjust the seasoning with more fine sea salt if needed. The liquid should be savory and well-balanced, enhancing the flavor of the pork without overpowering it.
  6. To serve, slice the pork knuckle and arrange it over a bed of the cooked rice. Add boiled egg and pickled mustard on the side for additional texture and flavor contrast. The dish should be a harmonious blend of savory, aromatic, and slightly tangy elements, perfect for sharing.
