Khao Man Gai

Serves 4 to 6 chicken

Khao Man Gai

Khao Man Gai, a beloved dish in Thailand, finds its roots in the culinary traditions of the Hainanese-Thai community. This dish is often enjoyed as a comforting meal, showcasing the seamless blend of Chinese and Thai influences. The recipe here is a reflection of how a Thai family cook might prepare it at home, capturing the essence of what makes it a staple in everyday dining.

The dish should taste like tender poached chicken, perfectly paired with fragrant chicken rice, and a vibrant kick of nam jim gai. A touch of cucumber adds freshness, while fine sea salt enhances the flavors without overpowering them. Each component is carefully balanced, inviting diners to savor each bite as a harmonious whole.

Ingredients

  • 1poached chicken
  • 400 gchicken rice
  • nam jim gai — to serve
  • 1cucumber
  • to tastefine sea salt

Method

  1. Begin by patting the poached chicken dry with paper towels to remove excess moisture. Season the chicken generously with fine sea salt, ensuring even coverage over the entire surface. Heat a large skillet over medium-high heat and add a generous amount of oil. Once the oil is shimmering, place the chicken in the skillet, skin side down, and brown it until the skin is golden and crispy, about 5-7 minutes. Flip the chicken to brown the other side briefly, then remove it from the skillet and set aside.
  2. In the same skillet, add any aromatics you prefer, such as sliced ginger and garlic, and cook them until they are tender and fragrant, about 2-3 minutes. Stir occasionally to prevent burning and ensure even cooking. The aromatics should be soft and slightly caramelized, enhancing the flavor of the dish.
  3. If the skillet has excess oil or liquid, reduce the sauce by simmering it gently until it thickens slightly, about 3-5 minutes. Taste the sauce and adjust the seasoning with more fine sea salt if necessary. The sauce should be flavorful and balanced, complementing the chicken and rice.
  4. To serve, slice the cucumber thinly and arrange it on a serving platter. Place the browned chicken on top of the cucumber slices. Spoon the reduced sauce over the chicken, allowing it to soak into the rice when served. Finish by garnishing with fresh herbs like cilantro for a burst of color and freshness.
  5. Serve the Khao Man Gai with a side of nam jim gai for dipping, allowing each person to adjust the spiciness and flavor to their liking. The dish is best enjoyed family-style, with everyone sharing from the same platter, as is traditional in Thai home cooking.
