Ingredients

Method

  1. Pat the whole chicken dry with paper towels to remove excess moisture. This helps the skin crisp up during cooking. Season the chicken generously with fine sea salt, black pepper, and 1 teaspoon of paprika, ensuring you rub the spices evenly over the entire surface.
  2. In a large, heavy-bottomed skillet or roasting pan, heat 2 tablespoons of oil over medium-high heat. Once the oil shimmers, carefully place the chicken in the pan, breast side down. Brown the chicken on all sides until the skin is golden and crisp, about 5-7 minutes per side. This step locks in the flavors and gives the chicken a beautiful color.
  3. While the chicken is browning, peel and cut the potatoes into large chunks. Once the chicken is browned, remove it from the pan and set it aside on a plate. Add the potato chunks to the same pan, allowing them to soak up the flavorful oil and chicken drippings.
  4. Return the chicken to the pan, placing it on top of the potatoes. Squeeze the juice from the halved lemon over the chicken and potatoes, then nestle the lemon halves in the pan. Cover the pan with a lid or aluminum foil to trap the steam, which helps cook the chicken through.
  5. Reduce the heat to medium-low and let the chicken and potatoes cook until the chicken is fully cooked and the potatoes are tender. The chicken is done when the juices run clear when pierced with a knife, and the potatoes should be easily pierced with a fork.
  6. If there is excess liquid in the pan, remove the lid and increase the heat to medium-high to reduce the sauce slightly. Taste the sauce and adjust the seasoning with more salt if necessary. The sauce should be flavorful and slightly thickened.
  7. Once the chicken and potatoes are cooked, remove the pan from the heat. Transfer the chicken to a serving platter, surround it with the potatoes, and pour any remaining sauce over the top. Garnish with fresh herbs of your choice, such as chopped parsley or cilantro, and serve immediately, inviting everyone to share in this comforting Korean home-cooked meal.
