Korean Shrimp Pan 2

Korean Shrimp Pan 2 is a beloved dish that finds its roots in the heart of Korean home cooking. It's typically prepared for casual family dinners, where the focus is on simplicity and robust flavors. Drawing from the tradition of hand-judging salt and generously using fat, this dish captures the essence of everyday Korean meals, where sharing is as important as the food itself.

When done right, this dish offers a delightful balance of flavors—succulent shrimp kissed by the warmth of garlic and the zing of fresh lemon juice. A hint of chili adds a gentle heat, while fine sea salt enhances every bite, creating a vibrant and satisfying experience that calls for everyone to dig in and enjoy.

Ingredients

  • 600 gshrimp
  • 4 clovesgarlic
  • 80 mlolive oil
  • lemonjuiced
  • to tastechili
  • to tastefine sea salt

Method

  1. Start by cleaning the 600 g of shrimp. Remove the shells and devein them by making a shallow cut along the back and pulling out the dark vein. Rinse the shrimp under cold water and pat them dry with a paper towel to remove excess moisture, which will help them sear properly.
  2. Peel and finely mince 4 cloves of garlic. In a large skillet, pour 80 ml of olive oil and add the minced garlic. Heat the skillet over medium heat, allowing the garlic to gently infuse the oil. Stir occasionally until the garlic becomes fragrant and lightly golden, ensuring it doesn't burn.
  3. Add the prepared shrimp to the skillet in a single layer, ensuring each piece makes contact with the pan. Cook the shrimp for about 2-3 minutes on one side until they start to turn pink and opaque around the edges. Flip each shrimp and cook for another 1-2 minutes on the other side until fully opaque and firm to the touch.
  4. Squeeze the juice of one lemon over the shrimp, allowing the acidity to brighten the flavors. Add chili to taste, adjusting the heat level to your preference. Stir the shrimp gently to coat them evenly with the lemon juice and chili.
  5. Taste a shrimp and sprinkle fine sea salt to taste, enhancing the natural sweetness of the shrimp. Serve immediately, ensuring the dish is warm and aromatic, perfect for sharing at the table.
