Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic

Method

  1. Rinse the 600 g squid rings under cold water to remove any impurities. Pat them dry thoroughly with paper towels to ensure they sear properly in the pan. Drying the squid is crucial to achieving a nice texture and preventing them from becoming rubbery during cooking.
  2. Peel and mince the 4 cloves of garlic. In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, add the minced garlic and stir-fry for about 30 seconds until it becomes fragrant, being careful not to let it brown.
  3. Add the dried squid rings to the skillet, spreading them out in a single layer. Stir-fry the squid for about 2 to 3 minutes, or until they just turn opaque. The squid should be tender and not rubbery, with a slight bounce when pressed.
  4. Season the squid with chili to taste, adjusting the heat level to your preference. Squeeze the juice of a lemon over the squid and give it a quick toss to combine the flavors.
  5. Taste the stir-fry and add fine sea salt to your liking, ensuring the flavors are balanced. Serve the Korean Squid Stir-Fry immediately while it's hot, allowing everyone at the table to enjoy its fresh and vibrant flavors.
