Ingredients

  • 600 gsquid rings
  • 4 clovesgarlic

Method

  1. Begin by ensuring the 600 g squid rings are thoroughly cleaned and patted dry. This is crucial to prevent excess moisture, which can cause the squid to steam rather than stir-fry, affecting the texture.
  2. Mince 4 cloves of garlic finely. In a large skillet or wok, heat 2 tablespoons of oil over medium-high heat. Once the oil is shimmering, add the garlic and stir it gently. Cook until the garlic is fragrant and just beginning to turn golden, which will infuse the oil with its aroma.
  3. Add the squid rings to the pan in a single layer. Stir them continuously to ensure even cooking. Watch for the squid to turn opaque and firm; this indicates that they are cooked through. Avoid overcooking, as this can make the squid rubbery.
  4. Add chili to taste, adjusting the amount based on your preference for heat. Squeeze the juice of one lemon over the squid, tossing everything together to combine the flavors. The lemon juice will add brightness and balance the heat from the chili.
  5. Taste the dish and add fine sea salt as needed, keeping in mind that the salt should enhance the natural flavors without overpowering them. Serve the Korean Squid Stir-Fry immediately, ensuring it is enjoyed while fresh and hot.
