Kunna Gosht

Serves 4 to 6 meat

Kunna Gosht

Kunna Gosht hails from the fertile lands of Punjab, where it is traditionally prepared in clay pots that lend a distinct earthiness to the dish. This home-style version captures the soul of a Pakistani family kitchen, where ingredients are measured by instinct rather than scales, and the pot simmers patiently until the mutton reaches its tender peak. It's a dish often reserved for special occasions, when the table is set for sharing and the aroma of spices fills the room.

Expect a rich and hearty flavor, as the mutton melds with creamy yogurt and the warmth of nutmeg. The generous use of ghee ensures a sumptuous texture, while the kunna masala weaves a complex spice profile that lingers with each bite. Serve it hot, allowing the depth of flavors to shine alongside fresh naan or steamed rice, inviting everyone to partake in the communal joy of this Punjabi classic.

Ingredients

  • 1 kgmutton
  • 200 gyogurt
  • 4 tbspghee
  • 1 tbspkunna masala
  • 1 tspnutmeg
  • to tastefine sea salt

Method

  1. In a large mixing bowl, combine 1 kg of mutton with 1 tbsp of kunna masala, 1 tsp of nutmeg, and fine sea salt to taste. Mix thoroughly to ensure each piece of meat is well-coated with the spices. This step is crucial for infusing the meat with flavor.
  2. In a heavy-bottomed pot or a traditional clay pot, heat 4 tbsp of ghee over medium-high heat. Once the ghee is hot and shimmering, add the seasoned mutton pieces in batches, ensuring not to overcrowd the pot. Brown each piece until it develops a deep, rich color on all sides, which should take about 5-7 minutes per batch. This browning process is essential for building flavor.
  3. Once all the mutton pieces are browned, return them to the pot. Lower the heat to medium and add 200 g of yogurt to the pot. Stir well to combine the yogurt with the meat and spices. The yogurt will help tenderize the meat and create a creamy base for the dish.
  4. Cover the pot with a tight-fitting lid and reduce the heat to low. Allow the mutton to braise gently in its own juices and the yogurt, stirring occasionally. Cook until the meat is tender and easily pulls apart with a fork, which should take about 1.5 to 2 hours. The aroma should be rich and inviting, indicating the flavors have melded well.
  5. Once the mutton is tender, taste the dish and adjust the salt if necessary. The flavors should be balanced, with the spices and yogurt complementing the richness of the meat.
  6. Serve the Kunna Gosht hot, garnished with fresh coriander if desired. Pair it with steamed rice, naan, or a fresh salad to complete the meal. This dish is meant to be shared, embodying the communal spirit of Punjabi cooking.
