Kuzu Tandır hails from the heart of Central Anatolia, where it is a cherished centerpiece of family meals and special occasions. Traditionally, this dish is prepared with a generous hand, using lamb shoulder seasoned with garlic, butter, and cumin, embodying the region's love for hearty and flavorful fare. Ingredients

  • 1.5 kglamb shoulder
  • 1 headgarlic
  • 2 tbspbutter
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the lamb shoulder, which should be at room temperature. Rub 1.5 kg of lamb shoulder generously with fine sea salt, ensuring that every surface is covered. Sprinkle 1 tsp of cumin evenly over the meat, along with a few grinds of black pepper to taste. This seasoning will penetrate the meat, enhancing its flavor during cooking.
  2. Peel the cloves from 1 head of garlic, leaving them whole. In a large, heavy-bottomed pot or Dutch oven, melt 2 tbsp of butter over medium-high heat. Once the butter is melted and begins to foam, add the lamb shoulder to the pot. Brown the lamb on all sides until it develops a deep, rich color, which should take about 3-5 minutes per side. This step is crucial for building flavor.
  3. Once the lamb is well-browned, add the whole garlic cloves to the pot, nestling them around the meat. Reduce the heat to low, and cover the pot with a tight-fitting lid. Allow the lamb to braise slowly, checking occasionally to ensure it is cooking evenly. The lamb is done when it is tender and easily pulls apart with a fork, which indicates that the connective tissues have broken down.
  4. After the lamb has reached the desired tenderness, taste a small piece and adjust the seasoning with more salt and black pepper if necessary. The meat should be flavorful and well-seasoned, with a hint of cumin and the sweetness of the garlic.
