One-Pan Fish with Cannellini & Cherry Tomatoes

One-Pan Fish with Cannellini & Cherry Tomatoes brings the essence of the Mediterranean to your kitchen, celebrating the tradition of unfussy, flavorful meals that rely on fresh ingredients and simple techniques. This dish is crafted for those who appreciate the ease of a one-pan dinner, where the bounty of the sea meets the garden's vibrant offerings.

The taste is a harmonious blend of tender white fish, creamy cannellini beans, and sweet cherry tomatoes, all elevated by the briny punch of olives and the warmth of garlic. Extra virgin olive oil ties everything together, while basil adds a fragrant finish. It's a comforting dish that speaks of sunny coastlines and the simple pleasure of a well-prepared meal.

Ingredients

  • 600 gwhite fish fillets
  • 400 gcannellini beans
  • 300 gcherry tomatoes
  • 80 golives
  • 60 mlextra virgin olive oil
  • 3 clovesgarlic
  • handfulbasil
  • to tastefine sea salt and black pepper

Method

  1. Pat the 600 g of white fish fillets dry with paper towels to remove excess moisture, which helps them sear better. Season both sides of the fillets with fine sea salt to enhance their natural flavor and set aside while you prepare the other ingredients.
  2. In a large, heavy-bottomed skillet, heat 60 ml of extra virgin olive oil over medium heat. Once the oil is shimmering, add 3 cloves of garlic, thinly sliced, and sauté until fragrant, about 1 minute. This will infuse the oil with a rich garlic aroma.
  3. Add 300 g of halved cherry tomatoes to the skillet, stirring occasionally, until they begin to soften and release their juices, creating a fresh, flavorful base. Season lightly with fine sea salt and black pepper to taste.
  4. Gently stir in 400 g of drained and rinsed cannellini beans and 80 g of pitted olives. Cook for an additional 2-3 minutes, allowing the flavors to meld together. The beans should be warmed through and the tomatoes slightly saucy.
  5. Nestle the seasoned fish fillets into the skillet among the tomatoes and beans. Cover the pan with a lid and cook for 5-7 minutes, or until the fish is just opaque and flakes easily with a fork. This indicates that the fish is perfectly cooked.
  6. Remove the skillet from the heat and scatter a handful of torn fresh basil leaves over the dish for a burst of herbal freshness. Squeeze a lemon wedge over the top to add brightness and balance to the flavors.
  7. Serve the One-Pan Fish with Cannellini & Cherry Tomatoes immediately, ensuring each plate gets a portion of fish, beans, tomatoes, and olives. Enjoy this Mediterranean-inspired dish with a side of crusty bread to soak up the delicious juices.
