Peruvian Beef Skewers 2

Peruvian Beef Skewers 2 is cooked the way Peruvian home tables cooks it — salt judged by hand, fat used generously, and the table set for sharing. This is the home version, written down the way a peruvian family cook actually puts it on the table.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Start by placing the 800 g of beef cubes in a large mixing bowl. Add 1 tsp of cumin, and season generously with fine sea salt and black pepper to taste. Toss the beef cubes thoroughly to ensure each piece is evenly coated with the spices, which will enhance the flavor during cooking.
  2. Peel and finely chop the onion. In a large skillet or cast-iron pan, heat 2 tbsp of oil over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and fragrant, which should take about 2 to 3 minutes.
  3. Add the seasoned beef cubes to the pan in a single layer, ensuring they are not overcrowded. Allow them to brown on one side without moving them, which will create a deep, rich crust. Once the first side is well-browned, turn the cubes to brown the other sides, ensuring each piece has a deep color and a slightly crispy texture on the outside.
  4. If using skewers, thread the browned beef cubes onto them, leaving a little space between each piece to allow for even cooking. If you prefer to braise, add a small amount of water or broth to the pan, cover, and let the beef cook gently until tender.
  5. For grilling, preheat your grill to medium-high heat. Place the skewers on the grill and cook, turning occasionally, until the beef is cooked to your desired doneness. The exterior should be charred with a smoky aroma, and the interior should be tender and juicy.
  6. Once the beef is cooked, taste a piece and adjust the seasoning with more salt if needed. Serve the skewers hot, accompanied by rice, bread, or a fresh salad to complement the rich flavors of the beef.
