Peruvian Beef Skewers

Peruvian Beef Skewers, or 'anticuchos', bring the warmth of home cooking straight to the dining table, where the casual precision of hand-measured salt and generous use of fat transform simple ingredients into a beloved dish. This version captures the essence of a Peruvian family meal, where the skewers are grilled to perfection and shared among friends and family.

Expect each skewer to deliver a delightful combination of tender beef and the aromatic sweetness of grilled onions, with cumin adding a subtle earthiness. The seasoning, left to your taste, allows for a personalized touch, ensuring every bite is a reminder of a home-cooked meal designed for sharing.

Ingredients

  • 800 gbeef cubes
  • 1onion
  • 2 tbspoil
  • 1 tspcumin
  • as neededskewers
  • to tastefine sea salt and black pepper

Method

  1. Begin by placing the 800 g of beef cubes in a large mixing bowl. Season them generously with fine sea salt and freshly ground black pepper to taste. Add 1 tsp of cumin, ensuring each piece is well-coated with the spices. This step infuses the beef with the essential flavors that define Peruvian Beef Skewers.
  2. Peel and finely chop 1 onion. In a large skillet or grill pan, heat 2 tbsp of oil over medium-high heat. Once the oil is shimmering, add the chopped onion and sauté until it becomes translucent and fragrant, which should take about 3-4 minutes. This will add a subtle sweetness and depth to the dish.
  3. Add the seasoned beef cubes to the pan in a single layer, ensuring they are not overcrowded. Allow them to brown on all sides, turning occasionally. Look for a deep, rich brown color on the surface of the beef, which indicates a good sear and caramelization, locking in the juices.
  4. Once the beef is well-browned, decide whether to continue cooking on the stovetop or transfer to a grill. If using a grill, preheat it to medium-high heat. Thread the beef cubes onto skewers, leaving a little space between each piece to ensure even cooking.
  5. Place the skewers on the grill or continue cooking in the skillet. Cook until the beef is tender and cooked to your desired doneness. For medium-rare, the interior should be slightly pink and juicy. Adjust the heat as necessary to avoid burning the exterior while ensuring the inside is cooked through.
  6. Once cooked, taste a piece of beef and adjust the seasoning with more salt if needed. Serve the Peruvian Beef Skewers immediately, accompanied by rice, bread, or a fresh salad, allowing everyone at the table to enjoy the communal and flavorful experience.
