Ingredients

  • 300 gbrown lentils
  • 1onion
  • 2tomatoes
  • 2 tbspoil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Rinse 300 g of brown lentils under cold running water to remove any dust or debris. Drain them well and set aside. Dice 1 onion finely and chop 2 tomatoes into small cubes. This preparation ensures even cooking and flavor distribution.
  2. In a large pot, heat 2 tbsp of oil over medium heat. Add the diced onion and cook gently, stirring occasionally, until the onion becomes translucent and soft, about 5 to 7 minutes. This slow cooking allows the onion to release its sweetness, forming a flavorful base.
  3. Add the chopped tomatoes to the pot with the onions. Stir in 1 tsp of cumin, allowing the spices to bloom in the oil. Cook until the tomatoes soften and meld with the onions, creating a fragrant mixture that forms the heart of the dish.
  4. Add the rinsed lentils to the pot, stirring to coat them with the onion and tomato mixture. Pour in enough water to cover the lentils by about 2 cm. Bring the mixture to a gentle simmer, allowing the lentils to cook slowly and absorb the flavors.
  5. Continue simmering the lentils, stirring occasionally, until they are tender but not mushy. The lentils should hold their shape but be soft enough to eat comfortably. This texture is key to achieving the right consistency for the dish.
  6. Once the lentils are cooked to the desired texture, taste and season with fine sea salt and black pepper to your liking. Adjust the seasoning gradually, tasting as you go to ensure the flavors are balanced.
