Pla Neung Manao

Pla Neung Manao is a beloved Thai dish, embodying the simplicity and vibrancy of home-cooked meals. Traditionally, this steamed lime fish graces family tables, especially during gatherings where sharing is at the heart of the occasion. Passed down through generations, it's prepared with intuitive measures, like salt judged by hand and fat used with generosity, reflecting the essence of a true Thai family kitchen.

The dish dazzles with its bold, fresh flavors—succulent white fish infused with citrusy lime juice and fiery bird chilies, balanced by the umami depth of fish sauce. Each mouthful is a harmony of heat and tang, softened by aromatic cilantro. Pla Neung Manao is best enjoyed with loved ones, encouraging a communal dining experience where flavors and stories are shared.

Ingredients

  • 1whole white fish — about 700 g
  • 6garlic cloves
  • 4bird chilies
  • 4 tbsplime juice
  • 3 tbspfish sauce
  • 1 handfulcilantro
  • to tastefine sea salt

Method

  1. Start by cleaning the whole white fish thoroughly under cold running water to remove any scales or impurities. Pat the fish dry with paper towels, ensuring it is completely dry to prevent steaming instead of cooking properly.
  2. Place a large steamer or a deep pan with a steaming rack over medium-high heat. Fill the bottom with water, ensuring it doesn't touch the rack, and bring it to a gentle simmer.
  3. While the water is heating, prepare the aromatics. Peel and finely slice the 6 garlic cloves. Slice the 4 bird chilies thinly, adjusting the amount based on your heat preference. Mix these with 4 tablespoons of lime juice and 3 tablespoons of fish sauce in a small bowl.
  4. Generously season the fish with fine sea salt, rubbing it inside and out to enhance the flavor. Place the fish on a heatproof plate that fits inside your steamer or on the steaming rack.
  5. Pour the aromatic lime juice mixture evenly over the fish, ensuring the garlic and chilies are distributed across the surface. This will infuse the fish with flavor as it cooks.
  6. Cover the steamer or pan with a tight-fitting lid and steam the fish until the flesh turns opaque and flakes easily with a fork, indicating it is cooked through. This should take about 15 to 20 minutes depending on the size of the fish.
  7. Once cooked, carefully remove the fish from the steamer. Taste the sauce that has collected on the plate and adjust the salt if necessary, adding more lime juice or fish sauce to balance the flavors.
  8. Garnish the fish with a handful of fresh cilantro leaves before serving. Serve immediately while the fish is hot, making sure to spoon some of the aromatic sauce over each portion for a burst of flavor.
