Method

  1. Rinse 180 g quinoa under cold water in a fine-mesh sieve to remove any bitterness. This step is crucial as it helps to eliminate the natural coating called saponin, which can make the quinoa taste soapy or bitter.
  2. In a medium saucepan, combine the rinsed quinoa with 400 ml water and a pinch of fine sea salt. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer gently. Cook until the quinoa has absorbed all the water and appears translucent with a small white spiral visible around each grain.
  3. While the quinoa is cooking, prepare the toppings. Chop 2 cups of seasonal fruit into bite-sized pieces. Choose fruits that are in season for the best flavor and nutrition, such as berries, peaches, or figs.
  4. In a small skillet over medium heat, toast 30 g almonds until they are golden brown and fragrant, stirring occasionally. This process enhances their flavor and adds a pleasant crunch to the dish. Once toasted, remove them from the heat and set aside to cool.
  5. Once the quinoa is cooked, remove it from the heat and let it sit, covered, for 5 minutes. This resting period allows the grains to fluff up nicely. Afterward, fluff the quinoa gently with a fork to separate the grains.
