Method

  1. Preheat your oven to 200°C (392°F) to ensure it's hot enough to roast the chicken and vegetables evenly. While the oven heats, cut the 800 g of chicken pieces into even portions if needed, ensuring they are similar in size for uniform cooking. Season the chicken generously with fine sea salt, freshly cracked black pepper, and the juice of one lemon. Sprinkle 1 teaspoon of oregano over the chicken, ensuring each piece is well-coated with the herbs and seasoning.
  2. Prepare the vegetables by slicing 2 peppers into strips, cutting 2 zucchinis into half-moons, and slicing 1 red onion into wedges. Place these vegetables, along with 250 g of cherry tomatoes, into a large mixing bowl. Drizzle 80 ml of extra virgin olive oil over the vegetables and season with salt and pepper to taste. Toss everything together until the vegetables are evenly coated with the oil and seasoning.
  3. Take a large sheet pan and spread the seasoned vegetables in an even layer across the pan. Make sure there is enough space between the vegetables to allow for proper roasting. Arrange the seasoned chicken pieces on top of the vegetables, ensuring they are not crowded, which allows for even browning and roasting.
  4. Place the sheet pan in the preheated oven. Roast the chicken and vegetables for about 25-30 minutes, or until the chicken is golden brown on the outside. You’ll know the chicken is done when it reaches an internal temperature of 75°C (165°F) and the juices run clear when pierced with a fork. The vegetables should be tender and slightly caramelized at the edges.
  5. Once cooked, remove the sheet pan from the oven and let the chicken rest for about 5 minutes. This resting time allows the juices to redistribute within the chicken, keeping it moist. Before serving, taste a piece of chicken and adjust the seasoning with additional salt or a squeeze of the second lemon if needed. Serve the chicken and vegetables directly from the sheet pan for a rustic, family-style meal.
