Ingredients

  • 2eggplants
  • 2tomatoes
  • 1onion
  • 80 mlolive oil
  • 3 clovesgarlic

Method

  1. Begin by washing and drying 2 eggplants and 2 tomatoes. Cut the eggplants into bite-sized cubes and the tomatoes into wedges. Peel and finely chop 1 onion and 3 cloves of garlic. Season the eggplant cubes with a generous pinch of fine sea salt and black pepper to taste, allowing them to sit for a few minutes to draw out excess moisture.
  2. In a large, heavy-bottomed pot, heat 80 ml of olive oil over medium heat. Add the chopped onion and cook slowly, stirring occasionally, until the onion becomes translucent and soft, which should take about 5 to 7 minutes. This slow cooking allows the onion to release its sweetness, forming the base of the stew.
  3. Add the chopped garlic to the pot and continue to cook for another 1 to 2 minutes, stirring frequently. The garlic should become fragrant but not browned, which will prevent it from becoming bitter.
  4. Increase the heat to medium-high and add the seasoned eggplant cubes to the pot. Stir well to coat the eggplant in the oil and onion mixture. Cook, stirring occasionally, until the eggplant begins to soften and turns a light golden brown on the edges. This should take about 5 minutes, and the eggplant will start to absorb the flavors of the base.
  5. Add the tomato wedges to the pot and stir to combine. Reduce the heat to medium and cover the pot with a lid. Allow the stew to simmer for about 10 minutes, stirring occasionally, until the eggplant is tender and the tomatoes have broken down, creating a thick, rustic sauce. The eggplant should be soft but still hold its shape, and the tomatoes should be fully integrated into the sauce.
  6. Taste the stew and adjust the seasoning with more fine sea salt and black pepper if needed. The flavors should be balanced, with the sweetness of the onion and the richness of the olive oil complementing the earthy eggplant and bright tomatoes. Serve the stew hot, ideally with steamed rice, and enjoy the dish as it would be shared at a Thai home table.
