Ingredients

  • 800 gchicken thighs
  • 2 tbspyogurt
  • 1 tbspoil
  • 1 tsppaprika

Method

  1. Start by patting 800 g of chicken thighs dry with paper towels to remove excess moisture. This ensures a good sear. Season the chicken generously with fine sea salt, black pepper, and 1 tsp paprika, rubbing the spices into the meat to enhance flavor.
  2. In a large skillet or grill pan, heat 1 tbsp oil over medium-high heat until shimmering. Place the chicken thighs skin-side down in the pan, without overcrowding, to allow even browning. Cook until the skin is golden brown and crispy, about 5-7 minutes. Flip the chicken and brown the other side, ensuring the thighs are cooked through with juices running clear.
  3. Once the chicken is browned, remove it from the pan and set aside. Lower the heat to medium and add 2 tbsp yogurt to the pan. Stir to combine with the pan drippings, scraping up any browned bits that add depth to the sauce.
  4. Allow the sauce to simmer gently, reducing slightly to thicken. Taste the sauce and adjust seasoning with more salt or black pepper if needed. The sauce should coat the back of a spoon and have a balanced flavor.
  5. Return the chicken thighs to the pan, turning them in the sauce to coat evenly. Let them warm through for a couple of minutes, absorbing the sauce's flavors.
  6. Finish by garnishing with fresh herbs of your choice, such as cilantro or Thai basil, to add a burst of freshness. Serve the chicken thighs hot, with the sauce spooned over, inviting everyone to share in this flavorful dish.
