Vegetable Biryani

Vegetable Biryani

Vegetable Biryani, as prepared in Hyderabad homes, is a vibrant mosaic of vegetables, rice, and spices, brought together with the kind of intuitive cooking that defines family meals. It's more than just a dish; it's a staple at gatherings where the table transforms into a canvas of flavors and aromas, each bite a reminder of the convivial spirit of sharing. This version is captured from the heart of a household, where salt is measured by feel and ghee is used with a generous hand.

The biryani should taste like a harmonious blend of fragrant basmati rice, tender vegetables, and a hint of saffron, all enveloped in the rich warmth of biryani masala. The yogurt adds a subtle tang that rounds out the flavors, while the onions provide a slight sweetness. This dish is a celebration of contrasts—fluffy yet hearty, aromatic yet grounded, a true reflection of home-cooked comfort.

Ingredients

  • 400 gbasmati rice
  • 400 gmixed vegetables
  • 150 gyogurt
  • 2onions — fried
  • 2 tbspbiryani masala
  • 3 tbspghee
  • 1 pinchsaffron
  • to tastefine sea salt

Method

  1. Rinse 400 g basmati rice under cold water until the water runs clear to remove excess starch, which helps keep the grains separate. Soak the rice in a bowl of water for 30 minutes, then drain. Meanwhile, chop 400 g mixed vegetables into bite-sized pieces and slice 2 onions thinly.
  2. In a large, heavy-bottomed pot, heat 3 tbsp ghee over medium heat. Add the sliced onions and cook, stirring occasionally, until they turn golden brown and caramelized, which should take about 10 minutes. This slow cooking releases the onions' sweetness, forming the base of the biryani's flavor.
  3. Add 2 tbsp biryani masala to the pot with the onions, stirring for about 1 minute until the spices become fragrant. This step blooms the spices, enhancing their flavors. Add the chopped mixed vegetables and a pinch of saffron, stirring to coat them evenly with the spiced onion mixture.
  4. Stir in 150 g yogurt and a pinch of fine sea salt, mixing until the yogurt is well incorporated. This adds a creamy texture and tangy flavor to the dish. Cook for another 5 minutes until the vegetables begin to soften but still retain some crunch.
  5. Gently fold in the soaked and drained rice, ensuring it is evenly mixed with the vegetables and spices. Add enough water to cover the rice by about 1 inch, and bring it to a gentle simmer. Cover the pot with a tight-fitting lid, reducing the heat to low, and cook until the rice is tender and the water is absorbed, about 15-20 minutes. The rice should be fluffy, with each grain separate.
  6. Once the rice is cooked, fluff it gently with a fork to avoid breaking the grains. Taste and adjust the salt if necessary, keeping in mind that the biryani should have a balanced flavor with a hint of spice and sweetness from the onions. Serve the Vegetable Biryani warm, garnished with fresh herbs if desired, and enjoy it as a communal dish.
