Method

  1. Start by preparing your vegetables. Cut the eggplant, zucchini, and tomatoes into uniform slices about 1/4 inch thick. This ensures even cooking and a harmonious blend of flavors. Place the slices in a large bowl, drizzle with 60 ml of olive oil, and season with fine sea salt and black pepper to taste. Toss gently to coat each piece evenly, then set aside.
  2. Heat a large skillet over medium heat and add the remaining 20 ml of olive oil. While the oil is heating, finely chop one onion. Add the onion to the skillet and cook slowly, stirring occasionally, until the onion becomes translucent and soft, about 5 to 7 minutes. This will form the aromatic base for the dish.
  3. Once the onion is soft, layer the eggplant, zucchini, and tomato slices over the onion in the skillet. Start with a layer of eggplant, followed by zucchini, and then tomatoes. Repeat the layers until all the vegetables are used. This layering allows the flavors to meld together as they cook.
  4. Cover the skillet with a lid and reduce the heat to low. Cook the vegetables gently for about 20 minutes.
