Ingredients

  • 4pike-perch fillets
  • 150 mlcream
  • 2 tbspfresh dill
  • 1 tbsplemon juice
  • 40 gbutter
  • white winea splash
  • to tastefine sea salt

Method

  1. Start by rinsing the 4 pike-perch fillets under cold water to remove any residual scales or impurities. Pat them dry thoroughly with paper towels to ensure a good sear later. Set them aside on a clean plate.
  2. In a large skillet, melt 40 g of butter over medium heat. Once the butter is fully melted and begins to foam, add a splash of white wine. Allow the wine to cook off slightly, creating a fragrant base that will complement the fish.
  3. Gently place the pike-perch fillets into the skillet, skin side down if they have skin. Cook them for about 3-4 minutes until the edges start to turn opaque and the skin, if present, becomes crisp. Carefully flip the fillets and cook for another 2-3 minutes until the fish is just opaque throughout and flakes easily with a fork.
  4. Reduce the heat to low and pour in 150 ml of cream, stirring gently to combine it with the pan juices. Add 2 tablespoons of freshly chopped dill and 1 tablespoon of lemon juice to the sauce, stirring until the sauce is smooth and slightly thickened.
  5. Taste the sauce and season with fine sea salt to your preference. Ensure the sauce is well-balanced with the freshness of the dill and the brightness of the lemon.
  6. Serve the Zanderfilet mit Dillrahmsauce immediately, spooning the creamy dill sauce generously over the fish. Pair it with boiled potatoes for a traditional accompaniment, allowing the sauce to mingle with the potatoes on the plate.
