Kachumber

Serves 4 to 6 vegan

Kachumber

Kachumber is a refreshing Indian salad that graces many thali tables across the country. It's a simple yet vibrant mix of cucumbers, tomatoes, onions, and green chili, all finely chopped and tossed together. The dish is brightened with a squeeze of lemon juice and a handful of fresh cilantro, making it a perfect accompaniment to heavier curries and dals.

Eaten throughout India, Kachumber is a staple side that balances flavors with its crisp texture and tangy taste. The salt is added to taste, allowing each cook to adjust it according to their preference. This home version captures the essence of how Indian family cooks bring it to the table, focusing on freshness and simplicity.

Ingredients

  • 2cucumbers
  • 2tomatoes
  • 1onion
  • 1green chili
  • 2 tbsplemon juice
  • 1 handfulcilantro
  • to tastefine sea salt

Method

  1. Begin by washing all the vegetables thoroughly under running water. Peel the cucumbers and dice them into small, even cubes. This ensures they mix well with the other ingredients and provide a consistent texture.
  2. Next, core the tomatoes and chop them into similar-sized pieces as the cucumbers. This helps in achieving a balanced bite in every spoonful of Kachumber. Place the cucumbers and tomatoes in a large mixing bowl.
  3. Peel the onion and slice it finely. The thin slices will blend seamlessly with the other ingredients, adding a mild sharpness without overpowering the dish. Add the sliced onion to the bowl with the cucumbers and tomatoes.
  4. Take the green chili, and after removing the seeds for a milder heat, finely chop it. Add the chili to the bowl, adjusting the quantity based on your heat preference.
  5. Roughly chop a handful of fresh cilantro leaves and add them to the bowl. The cilantro will add a fresh, herbaceous note to the salad.
  6. Pour 2 tablespoons of lemon juice over the mixture. The acidity of the lemon juice will enhance the flavors of the vegetables and provide a refreshing tang.
  7. Season the salad with fine sea salt to taste. Start with a small amount, mix, and taste, then adjust as needed. The salt should bring out the natural flavors of the vegetables without making the salad overly salty.
  8. Gently toss all the ingredients together using a large spoon or your hands. Be careful to mix thoroughly while keeping the vegetable pieces intact to maintain the salad's texture.
  9. Serve the Kachumber immediately with bread. The freshness of the vegetables and the tangy dressing make it a perfect accompaniment to a variety of Indian dishes.
