Ingredients

  • 250 ggreen lentils du Puy
  • 1bay leaf
  • 1 smallcarrot — small dice
  • 1 smallshallot — finely minced
  • 2 tbspred wine vinegar
  • 3 tbspwalnut oil or olive oil
  • 1 tspDijon mustard
  • 2 tbspparsley or chives — chopped
  • to tastefine salt and black pepper

Method

  1. Rinse 250 g of green lentils du Puy under cold running water to remove any dust or debris. Place them in a medium saucepan and cover with cold water, about 2.5 cm above the lentils. Add 1 bay leaf for flavor. Bring to a gentle simmer over medium heat, then reduce to low. Cook until the lentils are tender but still hold their shape, about 20-25 minutes, checking occasionally for a firm yet tender texture.
  2. While the lentils are cooking, finely dice 1 small carrot and 1 small shallot. These will add a sweet and aromatic base to the salad. Once the lentils are done, drain them and discard the bay leaf. Transfer the lentils to a large mixing bowl while they are still warm, which will help them absorb the dressing flavors.
  3. In a small bowl, whisk together 2 tbsp red wine vinegar, 3 tbsp walnut oil or olive oil, and 1 tsp Dijon mustard. The mixture should emulsify into a smooth dressing. Taste and adjust the balance if needed, ensuring the mustard's sharpness and vinegar's acidity are prominent but not overpowering.
  4. Add the diced carrot and shallot to the warm lentils, then pour the dressing over the mixture. Gently toss the ingredients with a wooden spoon or spatula, ensuring the lentils are evenly coated without being crushed. This step allows the warmth of the lentils to meld with the dressing, enhancing the flavors.
  5. Chop 2 tbsp of parsley or chives finely and sprinkle them over the salad. Season with fine salt and black pepper to taste, adjusting as needed to enhance the freshness of the herbs and the earthiness of the lentils. Toss gently once more to distribute the herbs evenly.
  6. Serve the Salade de Lentilles du Puy immediately, while the lentils are still slightly warm and the herbs are vibrant. This ensures the salad retains its lively textures and the flavors are at their peak.
