Salsa Criolla

Serves 4 to 6 vegan

Salsa Criolla

Salsa Criolla is the vibrant companion to Peru's grilled delights, a staple at family barbecues and weekend gatherings. It is a dish that transcends regions, appearing wherever the grill is fired up and the air fills with anticipation. This home version captures the spirit of how it's lovingly prepared in countless households, where each cook judges the salt by hand and uses fat with a generous heart.

Expect a lively punch of flavor as the crisp red onions meet the bright acidity of lime. The aji limo adds a fiery kick that dances playfully with the freshness of cilantro. This salsa is a celebration in itself, meant to be piled generously onto every plate, enhancing each bite with its tangy, spicy embrace.

Ingredients

  • 2red onions
  • 2limes
  • 1 handfulcilantro
  • 1aji limo
  • to tastefine sea salt

Method

  1. Begin by peeling 2 red onions and slicing them very thinly into half-moons. Use a sharp knife to ensure the slices are even and delicate, which will help them absorb the dressing more effectively. Place the sliced onions in a bowl of cold water for about 10 minutes to mellow their sharpness and enhance their crispness.
  2. While the onions soak, prepare the other ingredients. Finely chop a handful of cilantro, ensuring you include both leaves and tender stems for maximum flavor. Next, halve 2 limes and set them aside for juicing. Finally, finely dice 1 aji limo, removing the seeds if you prefer less heat. Be cautious when handling the aji limo, as it can be quite spicy.
  3. Drain the onions thoroughly and pat them dry with a clean kitchen towel. This step is crucial to prevent excess water from diluting the flavors of your Salsa Criolla. Transfer the onions to a large mixing bowl.
  4. Add the chopped cilantro and diced aji limo to the bowl with the onions. Squeeze the juice from the 2 limes over the mixture, ensuring you catch any seeds. The lime juice will not only add acidity but also help to soften the onions slightly.
  5. Season the mixture with fine sea salt to taste. Start with a small amount, then toss the ingredients gently to combine, being careful not to crush the onions. Taste and adjust the salt if necessary, as it should enhance the flavors without overpowering them.
  6. Serve the Salsa Criolla immediately, allowing its fresh and vibrant flavors to complement your meal. It pairs beautifully with bread or as a topping for grilled meats, bringing a refreshing contrast to richer dishes.
