Vinagrete is a staple at Brazilian churrasco, where the grill masters expertly handle salt and fat in perfect harmony. Expect a vibrant medley of juicy tomatoes, sharp onions, and crisp peppers, all bound together by a tangy vinegar and rich olive oil dressing. The fresh parsley adds a touch of green brightness, while fine sea salt enhances the natural flavors. Ingredients

  • 3tomatoes
  • 1onion

  • 80 mlolive oil

Method

  1. Begin by washing the 3 tomatoes, 1 onion, and 1 pepper thoroughly under cold running water. Pat them dry with a clean kitchen towel. This ensures any dirt or residues are removed, and the ingredients are ready for chopping.
  2. Dice the tomatoes into small, even pieces, about 1 cm in size, and place them in a large mixing bowl. This size allows the tomatoes to release their juices without becoming mushy, contributing to the Vinagrete's fresh texture.
  3. Peel and finely chop the onion, aiming for a similar size to the tomato pieces. Add the onion to the bowl with the tomatoes. The uniform size helps the flavors meld evenly, ensuring no single bite is overwhelmed by onion.
  4. Remove the seeds and membranes from the pepper, then chop it finely, matching the size of the other ingredients. Add the pepper to the bowl. This step ensures the pepper's flavor is present without overpowering the dish.
  5. Finely chop a handful of parsley and add it to the bowl. The parsley adds a fresh, herbal note that balances the acidity and richness of the other ingredients.
  6. In a small bowl, combine 2 tbsp of vinegar and 80 ml of olive oil. Whisk them together until they form a smooth, emulsified dressing. This mixture will coat the vegetables evenly, enhancing their flavors.
  7. Pour the dressing over the chopped vegetables in the mixing bowl. Sprinkle fine sea salt to taste, starting with a small pinch and adjusting as needed. The salt should enhance the flavors without making the dish overly salty.
