Cannellini Beans with Tomato & Sage

Cannellini Beans with Tomato & Sage is a staple in the comforting repertoire of Tuscan cuisine, where beans are as central to the table as bread and wine. This dish embodies the Mediterranean ethos of simplicity and quality, drawing its roots from the rustic kitchens of Italy where fresh, local ingredients transform into hearty, satisfying meals. It's a dish that thrives in everyday cooking, bridging the gap between land and sea with the ease of olive oil and the brightness of a freshly squeezed lemon.

The flavors here are a balance of creamy cannellini beans, juicy tomatoes, and the earthiness of sage, all brought together with a generous splash of extra virgin olive oil. Garlic adds depth, while fine sea salt enhances the natural sweetness of the tomatoes. Each bite should feel like a walk through a sunlit garden, where simplicity is celebrated and each ingredient sings in harmony.

Ingredients

  • 400 gcannellini beans
  • 3tomatoes
  • 6sage leaves
  • 3 clovesgarlic
  • 60 mlextra virgin olive oil
  • to tastefine sea salt

Method

  1. Begin by dicing the 3 tomatoes into small, even cubes. This ensures they cook evenly and release their juices at the same rate. Peel and finely chop the 3 cloves of garlic, and set aside the 6 sage leaves, leaving them whole for a more pronounced flavor.
  2. In a large skillet or sauté pan, pour in 60 ml of extra virgin olive oil and set the heat to medium. Add the chopped garlic to the pan and let it gently sizzle. Stir occasionally until the garlic becomes fragrant and turns a light golden color, being careful not to let it burn.
  3. Add the diced tomatoes to the pan with the garlic. Stir to combine and allow them to cook until they begin to soften and their juices start to thicken slightly. This should create a glossy, saucy base for the beans.
  4. Rinse and drain the 400 g of cannellini beans, then add them to the pan. Stir well to coat the beans with the tomato mixture. Tear the sage leaves slightly to release their oils and add them to the pan, stirring them in gently.
  5. Continue to cook the mixture, stirring occasionally, until the beans are heated through and the tomatoes have broken down into a thick, cohesive sauce. The beans should be tender but not mushy, and the sage should infuse the dish with its earthy aroma.
  6. Season the dish with fine sea salt to taste, stirring to ensure the seasoning is evenly distributed. Serve the Cannellini Beans with Tomato & Sage warm, perhaps with a squeeze of lemon if desired, to bring out the fresh, vibrant flavors.
