Daal Mash

Serves 4 to 6 vegetarian

Daal Mash

In the heart of Punjabi kitchens, Daal Mash is a staple that finds its way to the table with the ease of an old, cherished habit. Here, the dish is a reflection of familial hospitality, cooked with an intuitive hand that measures salt by feel and ghee by instinct. This version captures the essence of home cooking, without the embellishments of restaurant flair, focusing instead on the warmth of a shared meal.

Expect a comforting bowl of creamy urad dal, where the soft pulse mingles with the sweetness of caramelized onions and the bright acidity of tomatoes. The cumin adds a whisper of earthiness, grounding the dish in familiar flavors. Generous ghee enriches every bite, creating a satisfying mouthfeel that invites you to linger a while longer at the table.

Ingredients

  • 250 gurad dal
  • 1onion
  • 2tomatoes
  • 1 tspcumin
  • 3 tbspghee
  • to tastefine sea salt

Method

  1. Begin by rinsing 250 g of urad dal under cold running water until the water runs clear. This removes excess starch and any impurities. Set the dal aside to soak in a bowl of water for at least 30 minutes, allowing it to soften slightly for even cooking.
  2. While the dal is soaking, finely chop 1 onion and 2 tomatoes. Aim for uniform pieces so they cook evenly. This will ensure a consistent texture in the final dish, with no large chunks disrupting the smoothness of the daal.
  3. In a large, heavy-bottomed pot, heat 3 tablespoons of ghee over medium heat. Once the ghee is hot and shimmering, add the chopped onion. Sauté the onion until it becomes translucent and soft, stirring occasionally to prevent browning. This step builds a sweet, aromatic base for the daal.
  4. Add 1 teaspoon of cumin to the softened onions. Stir the mixture for about a minute, allowing the cumin to release its fragrance and infuse the ghee with its earthy aroma. This step enhances the depth of flavor in the dish.
  5. Drain the soaked urad dal and add it to the pot, along with the chopped tomatoes. Stir everything together to coat the dal and tomatoes in the ghee and spices. Cook for a few minutes until the tomatoes begin to break down and meld with the onions.
  6. Pour in enough water to cover the dal by about an inch. Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Let it simmer, stirring occasionally, until the dal is tender and creamy, with the grains holding their shape but soft to the bite. This should take about 25-30 minutes, depending on the age of the dal.
  7. Once the dal reaches the desired tenderness, season with fine sea salt to taste. Stir well to ensure the salt is evenly distributed. Taste and adjust the seasoning if necessary, keeping in mind that the salt should enhance the flavors without overpowering them.
  8. Serve the Daal Mash warm, ideally with freshly made roti or steamed rice. The dish should be creamy with a slight texture from the dal, and the flavors well-balanced with a hint of richness from the ghee.
